Cooking Tips: For a measuring cup, Extended stay America provides measurement calibrations on each 12 oz. paper coffee cup (they are available at their Grab-and-Go breakfast bar.) Save little packets of salt and pepper to use for cooking, instead of buying large containers of the spice. Purchase your sausage and bacon at the meat counter, so you are only purchasing the amount you need.

Ingredients

6 cups chicken stock
2 large red potatoes, unpeeled, diced
4 slices of bacon
2 mild Italian sausage links cut into 1/4 inch slices
1 large sweet onion, chopped
1 can navy beans (15 ounces), drained
2 cups fresh spinach, chopped
1 cup half & half
1/4 cup shredded Parmesan cheese
1 loaf fresh bakery bread

Instructions

Place chicken stock and cubed red potatoes in a large saucepan. Bring to a boil, reduce heat, and simmer until the potatoes are tender.
Meanwhile, in a skillet, cook the bacon until crisp (approximately 4-5 minutes). Remove the skillet from heat, Remove the bacon; crumble and set aside.
Using the same skillet, add the Italian sausage slices and onion to the bacon grease. Cook until the sausage is cooked through and the onions are tender.
When the potatoes are tender, remove the pot from the heat.
To the stock and potatoes, add the crumbled bacon, the cooked sausage and onions. the can of navy beans and the chopped spinach.
Simmer for 25-30 minutes, allowing the flavors to meld.
Add half & half. Heat, stirring occasionally. Add salt and black pepper to taste.
Serve in soup bowl or mug, garnish with Parmesan cheese. Enjoy with thick slices of crusty bread.
