
Microwave Gingerbread Cookies

Ingredients
- 2 1/2 c all-purpose flour
- 1 tsp nutmeg
- 1 tsp salt
- 1 tsp ginger
- 1/2 tsp cinnamon
- 1/2 cup shortening
- 1 cup sugar
- 1/2 cup molasses
- 1/4 cup water
Instructions
- Combine flour, nutmeg, salt, ginger, and cinnamon in a large glass measuring cup and set aside.
- In a large mixing bowl, whisk together the sugar and shortening until light and fluffy. Add molasses and water and blend into the mixture. Add flour to the mixture and blend until smooth.
- Chill dough in the fridge for at least 3 hours.
- Roll out chilled dough approximately ¼” thick and cut out cookies.
- Place sheet of wax paper in a glass baking dish and microwave the cookies on 50% power for 1 minute.
- Cook again at 50% power for 30 seconds.
- Cook again at 50% power for 30 seconds.
- Watch them carefully until they are golden brown, not dark brown.
- Cool completely, then decorate as desired.
